HEALTHY BIRTHDAY CAKE BATTER ENERGY BALLS 🎂 // I’m flying to Montana tomorrow and I’ve packed nothing. I have 3 articles I need to write tonight, a ton of laundry to do...but I’ve made these energy balls for my flight 😂
It took me a few batches to get these right, but after way too much internet research I discovered that a teensy bit of almond extract almost exactly mimics that vanilla cake batter flavor — especially when combined with oat flour and an overdose of vanilla extract. Honestly, these taste shockingly like the famous Milk bar birthday cake truffles (which I’m OBSESSED with), but they’re refined sugar free, and packed with fiber.
To make em, combine the following in a medium bowl:
2.5 tsp vanilla extract
3 tbsp unsalted creamy cashew butter (I used @justins)
1/4 tsp fine grain sea salt
4 tbsp coconut sugar
2/3 cup oat flour
1.5 tsp almond extract (I used @simplyorganicfoods, which is, well, organic, and I don’t recommend aritifical stuff)
1 tbsp unsweetened non dairy milk (I used @califiafarms)
Mix everything together — it’ll be a dry mixture, so you want to use your hands and kind of knead it until you get a big smooth ball. Add in 1 tbsp or so of organic sprinkles, if desired (unnecessary, but fun!!). Roll into 8 balls or so, and store in the fridge until ready to eat. Get ready to get addicted!
